Air Fryer Mini Pineapple Upside-Down Cakes

These mini cakes give you all the sticky pineapple upside-down goodness without heating the whole oven. Silicone cups make the flip much easier, which is nice because dessert should not require a negotiation.

Ingredients

  • 3 tablespoons butter, melted
  • 1/3 cup brown sugar
  • 6 pineapple rings or chunks, drained
  • 6 maraschino cherries, optional
  • 1 cup yellow cake mix
  • 1 egg
  • 1/3 cup pineapple juice or milk
  • 2 tablespoons vegetable oil
  • Cooking spray

Instructions

  1. Preheat the air fryer to 320°F. Grease 6 silicone muffin cups or small ramekins.
  2. Stir together the melted butter and brown sugar. Spoon a little into the bottom of each cup.
  3. Add pineapple and one cherry to each cup if using.
  4. In a bowl, whisk the cake mix, egg, pineapple juice or milk, and oil until smooth.
  5. Spoon batter over the pineapple, filling each cup about two-thirds full.
  6. Place the cups in the air fryer basket. Air fry for 12 to 14 mins., until the cakes spring back lightly and a toothpick comes out clean.
  7. Cool for 5 mins., then carefully invert onto plates.

Do not overfill the cups. | Drain pineapple well. | Invert while warm so the topping releases.
