Air Fryer Raspberry Cream Cheese Puff Pastry Bites

Keep puff pastry cold for the best lift. If it gets soft and floppy while you work, pop it in the fridge for 10 mins. Puff pastry has drama queen tendencies, but honestly, same.

Ingredients

  • 1 sheet frozen puff pastry, thawed but still cold
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup raspberry jam
  • 1/4 cup fresh raspberries, optional
  • 1 egg, beaten
  • 1 tablespoon coarse sugar, optional
  • Powdered sugar, for dusting optional

Instructions

  1. Preheat the air fryer to 350°F. Line the basket with air fryer parchment if needed.; stir together the cream cheese, powdered sugar, and vanilla until smooth.
  2. Unfold the puff pastry on a lightly floured surface and cut it into 12 equal squares.
  3. Place about 1 teaspoon of cream cheese filling in the center of each square. Add 1 teaspoon of raspberry jam and 1 fresh raspberry, if using.
  4. Fold two opposite corners toward the center and press gently to seal, or leave the squares open for a danish-style bite.
  5. Brush the pastry edges with beaten egg and sprinkle with coarse sugar if desired.
  6. Arrange the bites in a single layer in the air fryer basket, leaving space between them. Work in batches if needed.
  7. Air fry for 7 to 8 mins., until puffed and golden. Let cool for 5 mins. before dusting with powdered sugar.

Gourmet Geek Tip

Do not overcrowd the basket. | Seal corners with a dab of egg wash. | Cool slightly so the filling can set.
