Air Fryer Rosemary Potato Chips

Very thin, evenly sliced potatoes cook most consistently. Remove finished chips early so thinner pieces do not burn while thicker ones crisp. The 30-minute soaking time is included in prep time but excluded from total time.

Ingredients

  • 4 medium russet potatoes
  • 1 Tbsp olive oil
  • 2 tsp finely chopped fresh rosemary
  • 1/2 tsp salt

Instructions

  1. ADVANCE PREP REQUIRED
  2. Scrub the potatoes well.
  3. Slice them very thinly with a mandolin or sharp knife.
  4. Place the slices in a bowl of cold water and soak for 30 minutes, changing the water once or twice.
  5. Drain and dry the slices completely.
  6. Preheat the air fryer to 330°F.
  7. Toss the potatoes with the olive oil.
  8. Arrange in the basket in a loose, even layer and air fry for about 30 minutes, shaking frequently and removing chips as they become crisp.
  9. Toss the hot chips with rosemary and salt before serving.
