Air Fryer Southern Peach Cobbler

This cobbler is small-batch and cozy, with juicy peaches under a soft golden topping. Letting it rest matters because the filling thickens as it cools. Dessert patience is annoying, but useful.

Ingredients

  • 3 cups sliced peaches, fresh, frozen thawed, or canned drained
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • Cooking spray

Instructions

  1. Preheat the air fryer to 330°F. Grease a 7-inch air fryer-safe baking dish.
  2. In the dish, stir together the peaches, granulated sugar, lemon juice, vanilla, cinnamon, and cornstarch.
  3. In a bowl, stir together the flour, brown sugar, baking powder, and salt. Add the milk and melted butter and mix just until a thick batter forms.
  4. Drop spoonfuls of batter over the peaches. Do not spread it perfectly; cobbler likes a little rustic charm.
  5. Air fry for 18 to 22 mins., until the topping is golden and cooked through and the peaches are bubbling.
  6. Let rest for 8 to 10 mins. before serving.
