Banana Protein Pancakes

Because these pancakes are made with oats instead of flour, they are naturally more tender than traditional pancakes. Keeping them small makes them easier to flip and helps them cook evenly.

Ingredients

  • 1 banana
  • 1/2 cup oats
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon

Instructions

  1. Place the banana, oats, eggs, baking powder, vanilla, and cinnamon in a blender.
  2. Blend until smooth.
  3. Let the batter rest for 3–5 minutes so the oats can hydrate.
  4. Heat a lightly greased nonstick skillet over medium heat.
  5. Pour small rounds of batter onto the skillet.
  6. Cook for 2–3 minutes, until the edges begin to set and bubbles appear.
  7. Flip carefully and cook for 1–2 minutes more, until cooked through.
  8. Serve warm.
