BBQ Pulled Chicken Stuffed Zucchini Boats
This chicken dish is a flexible meal option that pairs well with simple sides and works nicely for leftovers.

- 2 medium zucchini
- 8 oz boneless skinless chicken breast
- 2 Tbsp light barbecue sauce
- 1/4 cup diced red onion
- 1/4 cup shredded reduced-fat cheddar or Monterey Jack cheese
- 1 tsp olive oil
- Salt and black pepper, to taste
Instructions
- Heat the oven to 400°F.
- Cut the zucchini in half lengthwise and scoop out some of the centers to create boats.
- Brush lightly with olive oil and season with salt and black pepper.
- Arrange cut-side up on a sheet pan and bake for 10 minutes.
- Meanwhile, season the chicken lightly with salt and black pepper.
- Cook in a skillet over medium heat for 5 to 6 minutes per side, until it reaches 165°F.
- Shred or chop the chicken and toss it with the barbecue sauce and red onion.
- Fill each zucchini boat with the chicken mixture and top with cheese.
- Return to the oven and bake for 8 to 10 minutes more, until the zucchini is tender and the cheese melts.
- Transfer to plates and serve while hot.
