Ingredients

  • 4 large cabbage leaves
  • 6 oz lean ground beef
  • 1/4 cup cooked brown rice
  • 1/4 bell pepper, finely diced
  • 1/4 cup diced onion
  • 1/2 cup tomato sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Heat the oven to 375°F and bring a large pot of water to a boil.
  2. Blanch the cabbage leaves for 1 to 2 minutes, just until pliable. Drain and let cool slightly.
  3. In a bowl, mix the ground beef, rice, bell pepper, onion, garlic powder, smoked paprika, salt, and pepper.
  4. Divide the filling among the cabbage leaves.
  5. Fold in the sides and roll tightly.
  6. Place the rolls seam-side down in a baking dish and spoon the tomato sauce over the top.
  7. Cover loosely with foil and bake for 30 to 35 minutes, until the beef is cooked through and the cabbage is tender.
  8. Serve while hot.
