Cheesy Cheddar Bacon Croquettes

Ingredients

  • FOR THE FILLING
  • 1 pound sharp cheddar cheese, block
  • 1 pound bacon, thinly sliced, room temperature
  • FOR THE BREADING
  • 4 Tbsps olive oil
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup seasoned breadcrumbs

Instructions

  1. Cut the cheddar into 6 even sticks.
  2. Wrap each cheese stick fully with bacon, trimming excess if needed.
  3. Freeze for 5 minutes to firm, but do not freeze solid.
  4. Place flour, beaten eggs, and breadcrumbs in three shallow bowls.
  5. Coat each bacon-wrapped cheese stick in flour, then egg, then breadcrumbs, pressing the crumbs firmly in place.
  6. For a thicker crust, dip again in egg and breadcrumbs.
  7. Preheat the air fryer to 390°F.
  8. Air fry for 7 to 8 minutes, or until golden and crisp.
