- 3 cups low-sodium chicken broth
- 1 cup diced potatoes
- 1 cup frozen peas
- 1 cup unsweetened almond milk
- 2 Tbsp all-purpose flour
- 1 tsp dried thyme

- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Sprinkle flour over the vegetables and cook for another minute, stirring constantly.
