- 8 oz boneless skinless chicken breast
- 1/2 apple, diced
- 1/4 cup halved grapes
- 1/4 cup chopped celery
- 2 Tbsp plain Greek yogurt
- 1 Tbsp mayonnaise
- 1 Tbsp chopped walnuts
- Salt and black pepper, to taste
- 2 cups mixed greens
- 1 tsp olive oil
Instructions
- Pat the chicken dry and season with salt and pepper.
- Heat the olive oil in a skillet over medium heat.
- Cook the chicken for 5 to 6 minutes per side, until it reaches 165°F.
- Let cool slightly, then chop.
- Combine the chicken, apple, grapes, celery, yogurt, mayonnaise, and walnuts.
- Stir until evenly coated.
- Season to taste.
- Serve over mixed greens.
