Chocolate Lava Brownie Cups

These are small, rich, and wonderfully dramatic for the effort involved. The centers should stay soft, so do not cook them until they look fully firm unless you want regular brownie cups. Still tasty, less lava. Tragic little volcano situation.

Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 4 tablespoons unsalted butter
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 6 soft chocolate truffles or chocolate candy centers
  • Cooking spray
  • Optional: powdered sugar, for dusting

Instructions

  1. Place the chocolate chips and butter in a microwave-safe bowl. Microwave in 20-second bursts, stirring each time, until smooth. Let cool for 3 mins.
  2. Whisk the sugar, egg, and vanilla into the melted chocolate mixture until glossy.
  3. Stir in the flour, cocoa powder, and salt just until combined.
  4. Lightly spray 6 silicone muffin cups or small air-fryer-safe ramekins with cooking spray.
  5. Spoon a little batter into each cup. Press one chocolate truffle into the center, then cover with the remaining batter.
  6. Preheat the air fryer to 330°F. Place the cups in the basket with space around them.
  7. Air fry for 7 to 8 mins., until the tops look set but the centers are still soft.
  8. Let the cups rest for 3 mins. before serving. Dust with powdered sugar if desired.
