Ingredients

  • 2 cups rolled oats
  • 2 medium apples, diced
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 Tbsp melted coconut oil
  • Additional coconut oil for greasing

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9×9-inch baking dish with coconut oil.
  2. In a large bowl, whisk together eggs, almond milk, maple syrup, and melted coconut oil.
  3. Stir in rolled oats, diced apples, cinnamon, nutmeg, baking powder, and salt until combined.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35–40 minutes or until the center is set and the top is lightly browned.
  6. Let cool slightly before cutting into squares.
