Cinnamon Sugar Cheesecake Egg Rolls
These are crisp on the outside and creamy in the middle, like cheesecake decided to sneak into the snack table. Keep the filling modest so the wrappers seal well and do not leak.

- 4 ounces cream cheese, softened
- 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 8 egg roll wrappers
- 2 tablespoons butter, melted
- Cooking spray
- 3 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- Optional: caramel sauce or berry sauce, for serving
Instructions
- beat the cream cheese, powdered sugar, vanilla, and 1/4 teaspoon cinnamon until smooth.
- Lay one egg roll wrapper on the counter with a corner facing you. Spoon about 1 tablespoon of cheesecake filling near the center.
- Fold the bottom corner over the filling, fold in the sides, then roll tightly. Moisten the top corner with water and press to seal. Repeat with the remaining wrappers and filling.
- Preheat the air fryer to 350°F. Lightly spray the basket with cooking spray.
- Brush the egg rolls lightly with melted butter, then place them in the basket seam-side down. Work in batches if needed.
- Air fry for 6 to 8 mins., turning once, until crisp and golden.
- In a shallow bowl, mix the granulated sugar and 1 teaspoon cinnamon.
- Brush the hot egg rolls with a little more melted butter if needed, then roll them in the cinnamon sugar.
- Serve warm with caramel or berry sauce if you want to be fancy without doing fancy things.
