Crispy Fish Sandwich with Light Tartar Sauce

- 2 white fish fillets
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 2 whole grain sandwich thins or buns
- Lettuce leaves
- Tomato slices
- 2 Tbsp light mayonnaise
- 1 Tbsp plain Greek yogurt
- 1 tsp relish
- 1 tsp lemon juice
Instructions
- Preheat oven to 425°F (218°C) or preheat air fryer.
- Dip fish fillets in egg then breadcrumbs; place on baking sheet. Bake or air fry for 10–12 minutes until crispy and cooked through.
- In a small bowl, mix mayonnaise, Greek yogurt, relish, and lemon juice to make tartar sauce.
- Assemble sandwiches: bun, lettuce, fish fillet, tomato, and tartar sauce.
