Ingredients

  • 8 oz medium shrimp, peeled and deveined
  • 2 medium zucchini, spiralized
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp sliced green onions
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes, optional

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and ginger and cook for 30 seconds.
  3. Add the shrimp and cook for 2 to 3 minutes per side, until pink and just cooked through.
  4. Stir in the zucchini noodles and soy sauce.
  5. Cook for 2 to 3 minutes, tossing gently, until the noodles are just tender.
  6. Season with black pepper and red pepper flakes if desired.
  7. Top with green onions and serve immediately.
