Ginger-Garlic Shrimp with Zucchini Noodles

Ingredients
- 8 oz medium shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp sliced green onions
- Salt and black pepper, to taste
- Pinch of red pepper flakes, optional
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and ginger and cook for 30 seconds.
- Add the shrimp and cook for 2 to 3 minutes per side, until pink and just cooked through.
- Stir in the zucchini noodles and soy sauce.
- Cook for 2 to 3 minutes, tossing gently, until the noodles are just tender.
- Season with black pepper and red pepper flakes if desired.
- Top with green onions and serve immediately.
