Ingredients

  • 2 medium sweet potatoes
  • 6 oz lean ground turkey
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/4 cup diced poblano pepper
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 1 tsp olive oil
  • 1/4 cup shredded reduced-fat cheddar cheese
  • Salt and black pepper, to taste

Instructions

  1. Heat the oven to 400°F.
  2. Pierce the sweet potatoes with a fork and bake for 35 to 45 minutes, until tender.
  3. Meanwhile, heat the olive oil in a skillet over medium heat.
  4. Add the ground turkey and cook until browned.
  5. Stir in the black beans, tomatoes, poblano, chili powder, cumin, salt, and pepper. Cook for 3 to 4 minutes, until heated through.
  6. Split the baked sweet potatoes lengthwise and fluff the centers with a fork.
  7. Spoon the turkey mixture into the sweet potatoes and top with cheese.
  8. Return to the oven for 3 to 5 minutes, until the cheese melts, then serve.
