Mini Apple Fritters
These fritters give you apple-cinnamon bakery vibes without deep frying or babysitting a pot of oil. Keep the apple pieces small so the centers cook before the outsides get too brown.

Ingredients
- 1 cup peeled finely diced apple
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon butter, melted
- Cooking spray
- 1/2 cup powdered sugar
- 1 to 2 tablespoons milk, for glaze
- 1/4 teaspoon vanilla extract, for glaze
Instructions
- Preheat the air fryer to 350°F. Line the basket with air fryer parchment and lightly spray it with cooking spray.; toss the diced apple with brown sugar, cinnamon, and lemon juice.; whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, vanilla, and melted butter.
- Stir the wet ingredients into the dry ingredients just until combined. Fold in the apple mixture.
- Drop small spoonfuls of batter onto the parchment, leaving space between each fritter. Work in batches if needed.
- Lightly spray the tops with cooking spray. Air fry for 7 to 9 mins., until golden and cooked through.; whisk together powdered sugar, milk, and vanilla to make a thick glaze.
- Drizzle the warm fritters with glaze and let them set for 2 mins. before serving.
