Peanut-Lime Shrimp Rice Noodles
This seafood recipe is best served soon after cooking so the texture stays tender and fresh.

Ingredients
- 8 oz medium shrimp, peeled and deveined
- 3 oz dry rice noodles
- 1 Tbsp peanut butter
- 1 Tbsp lime juice
- 1 Tbsp low-sodium soy sauce
- 1 tsp honey
- 1 garlic clove, minced
- 1 tsp olive oil
- 1/2 cup shredded carrots
- 1 Tbsp chopped cilantro
- 1 tsp chopped peanuts, optional
Instructions
- Cook the rice noodles according to package directions.
- Drain and rinse briefly.
- In a small bowl, whisk together the peanut butter, lime juice, soy sauce, honey, and garlic.
- Heat the olive oil in a large skillet over medium heat.
- Add the shrimp and cook for 2 to 3 minutes per side, until pink and opaque.
- Add the noodles and carrots to the skillet.
- Pour in the peanut-lime sauce and toss until coated and hot.
- Top with cilantro and peanuts if desired, then serve.
