Peanut-Lime Shrimp Rice Noodles

Peanut-Lime Shrimp Rice Noodles

Ingredients

  • 8 oz medium shrimp, peeled and deveined
  • 3 oz dry rice noodles
  • 1 Tbsp peanut butter
  • 1 Tbsp lime juice
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • 1/2 cup shredded carrots
  • 1 Tbsp chopped cilantro
  • 1 tsp chopped peanuts, optional

Instructions

  1. Cook the rice noodles according to package directions.
  2. Drain and rinse briefly.
  3. In a small bowl, whisk together the peanut butter, lime juice, soy sauce, honey, and garlic.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the shrimp and cook for 2 to 3 minutes per side, until pink and opaque.
  6. Add the noodles and carrots to the skillet.
  7. Pour in the peanut-lime sauce and toss until coated and hot.
  8. Top with cilantro and peanuts if desired, then serve.

Loosen the sauce with 1 to 2 tablespoons of warm water if it becomes too thick. | Do not overcook the noodles or they can break when tossed. | Serve with steamed broccoli or cucumber salad.
