Ingredients

  • 8 oz pork tenderloin, cut into 1-inch cubes
  • 4 scallions, trimmed and cut into 2-inch pieces
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup dry couscous
  • 1/2 cup boiling water or hot broth
  • 2 Tbsp chopped parsley
  • 1 Tbsp chopped mint
  • 1/4 cup diced cucumber
  • 2 Tbsp crumbled feta cheese

Instructions

  1. In a bowl, toss the pork and scallions with lemon juice, olive oil, garlic, salt, and pepper. Let sit 15 minutes.
  2. Thread the pork and scallions onto skewers.
  3. Place the couscous in a heatproof bowl.
  4. Pour the boiling water over it, cover, and let stand 5 minutes. Fluff with a fork.
  5. Stir the parsley, mint, cucumber, and feta into the couscous.
  6. Grill or cook the kebabs over medium-high heat for 8 to 10 minutes, turning occasionally, until the pork is cooked through.
  7. Serve the kebabs over or alongside the herbed couscous.
