Pork Stir-Fry with Rice Noodles

Ingredients
- 6 oz lean pork strips
- 3 oz dry rice noodles, or 1 cup cooked rice noodles
- 1 cup broccoli florets
- 1/2 cup sliced bell peppers
- 1 Tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 garlic clove, minced
- Optional: 1 tsp rice vinegar or a squeeze of lime
Instructions
- Cook the rice noodles according to package directions until just tender. Drain and set aside.
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the pork strips and cook for 3 to 4 minutes, stirring often, until lightly browned and nearly cooked through.
- Add the broccoli and bell peppers and stir-fry for 3 to 4 minutes, until the vegetables are crisp-tender.
- Stir in the garlic and cook for 30 seconds, just until fragrant.
- Add the cooked noodles and soy sauce.
- Toss until the noodles are hot and evenly coated.
- Add rice vinegar or a squeeze of lime if desired, then serve immediately.
