Ingredients

  • 1 lb lean ground beef (90% lean)
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 Tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper
  • 2 cups sliced mushrooms
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1 tsp Dijon mustard

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Form into 12 meatballs.
  2. Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook until browned on all sides, about 6–8 minutes. Transfer to a plate.
  3. Reduce heat to medium. Add butter to the skillet and sauté mushrooms until softened, about 5 minutes.
  4. Sprinkle flour over mushrooms and cook for 1 minute, stirring.
  5. Gradually whisk in beef broth and Dijon mustard; bring to a simmer.
  6. Return meatballs to the skillet. Cover and cook for 8–10 minutes until meatballs are cooked through and gravy thickens.
  7. Serve hot with mashed potatoes or cauliflower rice for a lighter option.
