Sesame Chicken & Quinoa Stir Fry
This chicken dish is a flexible meal option that pairs well with simple sides and works nicely for leftovers.

Ingredients
- 6 oz boneless skinless chicken breast, diced
- 1/2 cup cooked quinoa
- 1 cup broccoli florets
- 1/2 cup snap peas
- 1/2 cup sliced carrots
- 1 tsp sesame oil
- 1 Tbsp low-sodium soy sauce
- 1 tsp grated fresh ginger
- 1 tsp olive oil
Instructions
- Heat the olive oil and sesame oil in a large skillet over medium-high heat.
- Add the chicken and cook for 4 to 5 minutes, stirring occasionally, until lightly browned and cooked through.
- Add the broccoli, snap peas, and carrots. Cook for 3 to 4 minutes, until crisp-tender.
- Stir in the soy sauce and ginger.
- Add the cooked quinoa and toss until everything is hot and evenly coated.
- Serve immediately.
