Snickerdoodle Bites

These are soft little cookie bites with the classic snickerdoodle tang from cream of tartar. They firm up as they cool, so do not wait for them to look fully crisp in the air fryer or they may overbake. Tiny cookies are adorable, but they are also dramatic.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk, as needed
  • Cooking spray
  • 2 tablespoons granulated sugar, for coating
  • 1 teaspoon ground cinnamon, for coating

Instructions

  1. Preheat the air fryer to 325°F. Line the basket with air fryer parchment or lightly spray it with cooking spray.; whisk together the flour, cream of tartar, baking soda, cinnamon, and salt.
  2. In another bowl, beat the butter and sugar until creamy. Add the egg yolk and vanilla and mix until smooth.
  3. Stir in the flour mixture until a soft dough forms. If the dough feels dry, add milk 1 teaspoon at a time.; mix the coating sugar and cinnamon.
  4. Roll the dough into 18 small balls, then roll each one in the cinnamon sugar.
  5. Place the bites in the air fryer basket with space between them. Work in batches if needed.
  6. Air fry for 6 to 7 mins., until puffed and lightly set.
  7. Let the bites cool in the basket for 3 mins. before moving them to a rack.
