Spinach Turkey Meatballs with Marinara & Spaghetti Squash

Ingredients

  • 1 pound lean ground turkey
  • 1 cup chopped spinach
  • 1 egg
  • 1/3 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup marinara sauce
  • 1 medium spaghetti squash
  • Salt and pepper to taste
  • Optional: chopped basil or parsley for garnish

Instructions

  1. Heat the oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the halves cut-side down on a parchment-lined sheet pan and bake for 35 to 45 minutes, until tender.
  4. In a bowl, mix the ground turkey, spinach, egg, breadcrumbs, garlic, and Italian seasoning until just combined.
  5. Form into small meatballs.
  6. Bake the meatballs for 15 to 18 minutes, or brown them in a skillet, until they reach 165°F.
  7. Warm the marinara sauce in a skillet or saucepan and add the meatballs.
  8. Let the squash cool just enough to handle, then scrape the flesh into strands with a fork.
  9. Divide the spaghetti squash between plates and top with the meatballs and sauce.
