Ingredients

  • 1 acorn squash, halved and seeded
  • 6 oz chicken sausage
  • 1/4 cup dry quinoa
  • 1/2 cup water or broth
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1 tsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Heat the oven to 400°F.
  2. Place the squash halves cut-side down on a sheet pan and roast for about 30 minutes, until tender.
  3. Meanwhile, rinse the quinoa.
  4. Combine the quinoa with the water or broth in a small saucepan and bring to a boil. Cover and simmer for 12 to 15 minutes, until tender.
  5. Heat the olive oil in a skillet over medium heat.
  6. Remove the sausage from the casing if needed, then cook it with the onion and celery for 5 to 6 minutes, until browned and cooked through.
  7. Stir the cooked quinoa into the sausage mixture and season to taste.
  8. Fill the roasted squash halves with the mixture and serve warm.
