Szechuan Beef and Green Bean Stir-Fry

Ingredients

  • 8 oz lean beef strips
  • 2 cups green beans, trimmed
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp rice vinegar
  • 1 tsp chili garlic sauce or sriracha
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • Optional: 1/2 cup cooked rice for serving

Instructions

  1. In a small bowl, stir together the soy sauce, rice vinegar, chili garlic sauce, garlic, and ginger.
  2. Heat the olive oil and sesame oil in a skillet or wok over medium-high heat.
  3. Add the beef and cook for 2 to 3 minutes, until browned.
  4. Transfer to a plate.
  5. Add the green beans and cook for 4 to 5 minutes, stirring often, until crisp-tender.
  6. Return the beef to the pan and pour in the sauce.
  7. Toss for 1 to 2 minutes, until everything is coated and hot.
  8. Serve on its own or with a small portion of rice.
