Breakfast Quesadilla with Spinach & Turkey Sausage
This is a good make-ahead breakfast for busy mornings. Cook the filling in advance, then assemble and crisp the quesadilla when ready to eat.

Ingredients
- 1 whole-wheat tortilla
- 2 large egg whites plus 1 large egg
- 2 oz turkey sausage, crumbled
- 1 cup baby spinach, roughly chopped
- 1/4 cup shredded reduced-fat cheddar cheese
- 1 tsp olive oil or nonstick spray
- 1 Tbsp salsa, for serving
- Salt and black pepper, to taste
Instructions
- Heat a nonstick skillet over medium heat.
- Add the olive oil.
- Add the turkey sausage and cook for 3 to 4 minutes, breaking it up with a spoon, until browned and cooked through.
- Add the spinach and cook for 30 to 60 seconds, just until wilted. Transfer to a plate.
- Whisk the egg whites and egg with a pinch of salt and pepper.
- Pour into the skillet and scramble gently until just set.
- Return the sausage and spinach to the pan and stir to combine.
- Place the tortilla in the skillet or on a clean work surface. Spoon the egg mixture over one half and top with the cheese.
- Fold the tortilla over and cook 1 to 2 minutes per side over medium-low heat until lightly golden and the cheese melts. Cut into wedges and serve with salsa.
