Thyme Chicken and Dumpling Soup

Ingredients

  • 1 lb boneless skinless chicken thighs, cut into bite-size pieces
  • 1 Tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cups chicken broth
  • 1 cup low-fat milk
  • 1 cup frozen peas
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper
  • For dumplings: 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp butter, melted
  • 1/2 cup low-fat milk
  • 1

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add chicken and cook until no longer pink. Remove to a plate.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  3. Return chicken to the pot; add chicken broth, milk, bay leaf, thyme, salt, and pepper. Bring to a simmer.
  4. Meanwhile, make dumplings: In a bowl, combine flour, baking powder, and salt. Stir in melted butter and milk until a soft dough forms.
  5. Drop spoonfuls of dough onto the simmering soup. Cover and cook for 15 minutes without lifting the lid, until dumplings are cooked through.
  6. Stir in peas and cook for 2 minutes more. Remove bay leaf and serve.
