Sweet Potato Hash with Egg Whites & Poblano Peppers

Ingredients

  • 1 medium sweet potato, peeled and diced small
  • 1 poblano pepper, seeded and diced
  • 1/4 cup diced onion
  • 4 large egg whites
  • 2 tsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • Pinch of smoked paprika or cumin, optional

Instructions

  1. Heat 1 tsp olive oil in a large skillet over medium heat.
  2. Add the sweet potato, poblano pepper, and onion.
  3. Season with salt, pepper, and smoked paprika, if using.
  4. Cook for 3 to 4 minutes, stirring occasionally.
  5. Add 2 Tbsp water, cover, and cook for 6 to 8 minutes until the sweet potato is tender.
  6. Uncover and cook for another 2 to 3 minutes until the vegetables are lightly browned.
  7. Push the hash to one side of the skillet.
  8. Add the remaining 1 tsp olive oil and pour in the egg whites.
  9. Scramble until just set, then fold into the hash.
  10. Divide between plates and serve hot.
