Turkey & Poblano Quesadilla with Black Beans

Ingredients
- 2 whole-wheat tortillas
- 6 oz turkey breast, diced small
- 1/4 cup roasted poblano strips
- 1/3 cup black beans, drained and rinsed
- 1/4 cup shredded reduced-fat cheese
- 1/4 tsp ground cumin
- 2 Tbsp salsa, for serving
- Cooking spray or 1 tsp olive oil
- Salt and black pepper, to taste
Instructions
- Heat a skillet over medium heat and lightly coat with cooking spray or olive oil.
- Add the turkey and cook for 4 to 5 minutes, stirring occasionally, until cooked through.
- Season lightly with salt, black pepper, and cumin.
- Stir in the poblano strips and black beans and cook 1 minute more, just until warmed through.
- Place the tortillas on a clean surface.
- Divide the filling between the tortillas, spreading it over one half of each, and top with the cheese.
- Fold each tortilla over and cook in the skillet for 2 to 3 minutes per side, until golden brown and the cheese melts.
- Cut into wedges and serve with salsa.
