Beef & Poblano Stir Fry with Broccoli

Ingredients

  • 8 oz lean beef strips
  • 1 poblano pepper, thinly sliced
  • 2 cups broccoli florets
  • 1 tsp sesame oil
  • 1 Tbsp low-sodium soy sauce
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 1 tsp olive oil
  • Optional: cooked rice or cauliflower rice, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the beef and cook for 2 to 3 minutes, until browned.
  3. Transfer to a plate.
  4. Add the poblano and broccoli to the skillet.
  5. Cook for 4 to 5 minutes, stirring often, until crisp-tender.
  6. Stir in the garlic, ginger, sesame oil, and soy sauce.
  7. Return the beef to the skillet and cook for 1 to 2 minutes more, until heated through and coated.
  8. Serve as is or over a small portion of rice or cauliflower rice.
