Ingredients
- 8 oz lean ground turkey
- 1/2 small onion, diced
- 1 garlic clove, minced
- 1/2 poblano pepper, diced
- 1 can (14 to 15 oz) diced tomatoes
- 1 cup black beans, drained and rinsed
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1 tsp olive oil
- Salt and black pepper, to taste
- Optional: 2 Tbsp plain Greek yogurt or chopped cilantro for serving
Instructions
- Heat the olive oil in a medium pot over medium heat.
- Add the onion, garlic, and poblano and cook for 2 to 3 minutes.
- Add the ground turkey and cook until browned, breaking it apart with a spoon.
- Stir in the tomatoes, black beans, chili powder, cumin, salt, and pepper.
- Bring to a gentle simmer and cook uncovered for 15 to 20 minutes, stirring occasionally, until slightly thickened.
- Taste and adjust the seasoning.
- Serve hot with Greek yogurt or cilantro if desired.
