- 2 small boneless skinless chicken breasts
- 1 tsp olive oil
- 1/2 tsp sweet paprika
- 1/4 tsp garlic powder
- 1 cup sliced mushrooms
- 1/2 bell pepper, sliced
- 1/4 cup low-sodium chicken broth
- 2 Tbsp plain Greek yogurt or light sour cream
- Salt and black pepper, to taste
Instructions
- Season the chicken with paprika, garlic powder, salt, and pepper.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken and cook for 4 to 5 minutes per side, until lightly browned.
- Transfer to a plate.
- Add the mushrooms and bell peppers to the skillet and cook for 4 minutes, until softened.
- Pour in the chicken broth and scrape up any browned bits.
- Return the chicken to the skillet.
- Cover and cook for 5 to 7 minutes, until the chicken reaches 165°F.
- Remove from the heat and stir the Greek yogurt into the sauce.
- Spoon the mushrooms and sauce over the chicken to serve.
