Chicken Paprika with Mushrooms & Bell Peppers

Ingredients

  • 2 small boneless skinless chicken breasts
  • 1 tsp olive oil
  • 1/2 tsp sweet paprika
  • 1/4 tsp garlic powder
  • 1 cup sliced mushrooms
  • 1/2 bell pepper, sliced
  • 1/4 cup low-sodium chicken broth
  • 2 Tbsp plain Greek yogurt or light sour cream
  • Salt and black pepper, to taste

Instructions

  1. Season the chicken with paprika, garlic powder, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken and cook for 4 to 5 minutes per side, until lightly browned.
  4. Transfer to a plate.
  5. Add the mushrooms and bell peppers to the skillet and cook for 4 minutes, until softened.
  6. Pour in the chicken broth and scrape up any browned bits.
  7. Return the chicken to the skillet.
  8. Cover and cook for 5 to 7 minutes, until the chicken reaches 165°F.
  9. Remove from the heat and stir the Greek yogurt into the sauce.
  10. Spoon the mushrooms and sauce over the chicken to serve.
