Jamaican Jerk Chicken with Pineapple Salsa & Brown Rice

Ingredients

  • 2 small boneless skinless chicken breasts
  • 1 tsp olive oil
  • 1 tsp jerk seasoning
  • 1 cup cooked brown rice
  • 1/2 cup diced fresh pineapple
  • 2 Tbsp diced red bell pepper
  • 1 Tbsp diced red onion
  • 1 tsp lime juice
  • 1 Tbsp chopped cilantro
  • Salt and black pepper, to taste

Instructions

  1. Rub the chicken with olive oil and jerk seasoning.
  2. Cook in a skillet or grill pan over medium-high heat for 5 to 6 minutes per side, until it reaches 165°F.
  3. Let rest for 5 minutes, then slice.
  4. In a small bowl, combine the pineapple, bell pepper, red onion, lime juice, and cilantro.
  5. Divide the brown rice between bowls.
  6. Top with the sliced jerk chicken and pineapple salsa.
  7. Serve immediately.
