- 2 small boneless skinless chicken breasts
- 1 tsp olive oil
- 1 tsp jerk seasoning
- 1 cup cooked brown rice
- 1/2 cup diced fresh pineapple
- 2 Tbsp diced red bell pepper
- 1 Tbsp diced red onion
- 1 tsp lime juice
- 1 Tbsp chopped cilantro
- Salt and black pepper, to taste
Instructions
- Rub the chicken with olive oil and jerk seasoning.
- Cook in a skillet or grill pan over medium-high heat for 5 to 6 minutes per side, until it reaches 165°F.
- Let rest for 5 minutes, then slice.
- In a small bowl, combine the pineapple, bell pepper, red onion, lime juice, and cilantro.
- Divide the brown rice between bowls.
- Top with the sliced jerk chicken and pineapple salsa.
- Serve immediately.
