Lemon-Dill Turkey Patties with Cucumber Salad

  • 8 oz lean ground turkey
  • 1 Tbsp chopped fresh dill

  • 1 tsp lemon juice
  • 1 Tbsp breadcrumbs
  • 1/4 tsp garlic powder
  • 1 tsp olive oil
  • For the SALAD
  • 1/2 cucumber, thinly sliced
  • 1 Tbsp plain Greek yogurt
  • Pinch of salt and black pepper

Instructions

  1. In a bowl, mix the ground turkey, dill, lemon zest, lemon juice, breadcrumbs, and garlic powder.
  2. Form into two patties.
  3. Heat the olive oil in a skillet over medium heat.
  4. Cook the patties for 4 to 5 minutes per side, until browned and cooked through.
  5. In a small bowl, stir together the cucumber, Greek yogurt, lemon juice, salt, and pepper.
  6. Serve the turkey patties with the cucumber salad on the side.
