Air Fryer Mini Lemon Baby Bundt Cakes

These little cakes are bright, soft, and lemony without needing a full-size oven. Greek yogurt or sour cream keeps them tender in the air fryer.

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/4 cup plain Greek yogurt or sour cream
  • 2 Tbsp vegetable oil
  • 1 Tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract
  • 1/3 cup powdered sugar
  • 1–2 tsp lemon juice, for glaze

Instructions

  1. Preheat the air fryer to 320°F.
  2. Grease 6 mini Bundt cups or small silicone cake molds.
  3. Whisk the flour, baking powder, baking soda, salt, and sugar in a bowl.
  4. Whisk the egg, yogurt, oil, lemon juice, lemon zest, and vanilla in a second bowl.
  5. Stir the wet ingredients into the dry ingredients until just combined.
  6. Divide the batter among the prepared molds.
  7. Air fry for 10–12 mins., until the cakes spring back when touched.
  8. Cool the cakes for 5 mins.
  9. Remove the cakes from the molds.
  10. Stir the powdered sugar and lemon juice together to make a glaze.
  11. Drizzle the glaze over the cooled cakes.
