Air Fryer Mini Lemon Baby Bundt Cakes
These little cakes are bright, soft, and lemony without needing a full-size oven. Greek yogurt or sour cream keeps them tender in the air fryer.

Ingredients
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/3 cup granulated sugar
- 1 large egg
- 1/4 cup plain Greek yogurt or sour cream
- 2 Tbsp vegetable oil
- 1 Tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
- 1/3 cup powdered sugar
- 1–2 tsp lemon juice, for glaze
Instructions
- Preheat the air fryer to 320°F.
- Grease 6 mini Bundt cups or small silicone cake molds.
- Whisk the flour, baking powder, baking soda, salt, and sugar in a bowl.
- Whisk the egg, yogurt, oil, lemon juice, lemon zest, and vanilla in a second bowl.
- Stir the wet ingredients into the dry ingredients until just combined.
- Divide the batter among the prepared molds.
- Air fry for 10–12 mins., until the cakes spring back when touched.
- Cool the cakes for 5 mins.
- Remove the cakes from the molds.
- Stir the powdered sugar and lemon juice together to make a glaze.
- Drizzle the glaze over the cooled cakes.
