Air Fryer Rustic Mixed Berry Galette

A galette is pie’s relaxed cousin — less fussy, more forgiving, and no one has to crimp anything unless they’re feeling fancy. The air fryer gives the crust a crisp edge while keeping the berry center jammy.

Ingredients

  • 1 refrigerated pie crust
  • 2 cups mixed berries, fresh or frozen
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 egg, beaten
  • 1 tablespoon coarse sugar or granulated sugar
  • Powdered sugar, optional

Instructions

  1. Preheat the air fryer to 340°F. Cut a piece of parchment to fit the basket.
  2. In a bowl, toss the berries with sugar, cornstarch, lemon juice, vanilla, and salt.
  3. Roll the pie crust onto the parchment. Spoon the berry filling into the center, leaving a 2-inch border.
  4. Fold the edges of the crust up over the filling, pleating as you go. The center should stay open.
  5. Brush the crust with beaten egg and sprinkle with coarse sugar.
  6. Carefully place the parchment and galette in the air fryer basket.
  7. Air fry for 14 to 16 mins., until the crust is golden and the filling bubbles.
  8. Cool for at least 10 mins. before slicing.
Gourmet Geek Tip

Keep the filling centered. | Do not skip the cornstarch. | Cool before slicing so it holds together.
