Blueberry Hand Pies
These little pies give you bakery-style fruit filling without a full pie project. Let the filling cool before assembling so the crust stays easier to handle and does not get soggy.

Ingredients
- 1 cup fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- 1/4 teaspoon vanilla extract
- 1 refrigerated pie crust sheet
- 1 egg, beaten
- Cooking spray
- 1/2 cup powdered sugar
- 1 to 2 tablespoons milk
- 1/4 teaspoon vanilla extract, for glaze
Instructions
- In a small saucepan, stir together the blueberries, sugar, lemon juice, cornstarch, and vanilla. Cook over medium heat for 4 to 5 mins., until the berries soften and the filling thickens. Let it cool for 10 mins.
- Unroll the pie crust and cut it into 8 equal rectangles or circles.
- Spoon a small amount of blueberry filling onto half of each piece, leaving a clean edge. Do not overfill, no matter how bossy the blueberries get.
- Fold the dough over the filling and press the edges with a fork to seal.
- Cut a tiny slit in the top of each hand pie so steam can escape.
- Preheat the air fryer to 350°F. Lightly spray the basket or use air fryer parchment.
- Brush the tops with beaten egg and place the pies in the basket with space between them. Work in batches if needed.
- Air fry for 7 to 9 mins., until golden brown and crisp.; whisk powdered sugar, milk, and vanilla into a smooth glaze. Drizzle over the warm pies and let set for 3 mins. before serving.
