Beef & Poblano Stir Fry with Broccoli

Ingredients
- 8 oz lean beef strips
- 1 poblano pepper, thinly sliced
- 2 cups broccoli florets
- 1 tsp sesame oil
- 1 Tbsp low-sodium soy sauce
- 1 garlic clove, minced
- 1 tsp grated fresh ginger
- 1 tsp olive oil
- Optional: cooked rice or cauliflower rice, for serving
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beef and cook for 2 to 3 minutes, until browned.
- Transfer to a plate.
- Add the poblano and broccoli to the skillet.
- Cook for 4 to 5 minutes, stirring often, until crisp-tender.
- Stir in the garlic, ginger, sesame oil, and soy sauce.
- Return the beef to the skillet and cook for 1 to 2 minutes more, until heated through and coated.
- Serve as is or over a small portion of rice or cauliflower rice.
