Black Bean & Turkey Chili

Ingredients

  • 8 oz lean ground turkey
  • 1/2 small onion, diced
  • 1 garlic clove, minced
  • 1/2 poblano pepper, diced
  • 1 can (14 to 15 oz) diced tomatoes
  • 1 cup black beans, drained and rinsed
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 tsp olive oil
  • Salt and black pepper, to taste
  • Optional: 2 Tbsp plain Greek yogurt or chopped cilantro for serving

Instructions

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the onion, garlic, and poblano and cook for 2 to 3 minutes.
  3. Add the ground turkey and cook until browned, breaking it apart with a spoon.
  4. Stir in the tomatoes, black beans, chili powder, cumin, salt, and pepper.
  5. Bring to a gentle simmer and cook uncovered for 15 to 20 minutes, stirring occasionally, until slightly thickened.
  6. Taste and adjust the seasoning.
  7. Serve hot with Greek yogurt or cilantro if desired.
