Breakfast Quesadilla with Spinach & Turkey Sausage

This is a good make-ahead breakfast for busy mornings. Cook the filling in advance, then assemble and crisp the quesadilla when ready to eat.

Ingredients

  • 1 whole-wheat tortilla
  • 2 large egg whites plus 1 large egg
  • 2 oz turkey sausage, crumbled
  • 1 cup baby spinach, roughly chopped
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 1 tsp olive oil or nonstick spray
  • 1 Tbsp salsa, for serving
  • Salt and black pepper, to taste

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Add the olive oil.
  3. Add the turkey sausage and cook for 3 to 4 minutes, breaking it up with a spoon, until browned and cooked through.
  4. Add the spinach and cook for 30 to 60 seconds, just until wilted. Transfer to a plate.
  5. Whisk the egg whites and egg with a pinch of salt and pepper.
  6. Pour into the skillet and scramble gently until just set.
  7. Return the sausage and spinach to the pan and stir to combine.
  8. Place the tortilla in the skillet or on a clean work surface. Spoon the egg mixture over one half and top with the cheese.
  9. Fold the tortilla over and cook 1 to 2 minutes per side over medium-low heat until lightly golden and the cheese melts. Cut into wedges and serve with salsa.
