Breakfast Tostada with Black Beans & Salsa

Ingredients
- 2 corn tostada shells
- 1/2 cup black beans, drained and rinsed
- 2 large eggs
- 2 Tbsp prepared salsa
- 1/4 avocado, thinly sliced
- 1 tsp olive oil or nonstick spray
- 1 Tbsp water
- Salt and black pepper, to taste
- Optional: chopped cilantro or a squeeze of lime
Instructions
- Warm the black beans in a small saucepan or in the microwave with 1 Tbsp of water.
- Lightly mash them with a fork.
- Heat the olive oil in a small skillet over medium heat.
- Crack in the eggs and scramble until just set.
- Season with salt and pepper.
- Place the tostada shells on plates.
- Spread the warm beans over each shell.
- Divide the scrambled eggs between the tostadas.
- Top with salsa and avocado slices.
- Finish with cilantro or lime juice if desired and serve right away so the tostadas stay crisp.
