Cajun Fish & Rice Skillet

Ingredients
- 4 fish fillets (such as tilapia)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 celery stalk, diced
- 1 onion, diced
- 2 tsp Cajun seasoning
- 1 Tbsp olive oil
- Salt and pepper
Instructions
- Season fish with 1 tsp Cajun seasoning and salt; set aside.
- Heat olive oil in skillet; sauté pepper, celery, and onion until soft.
- Stir in rice and remaining Cajun seasoning; cook 1 minute.
- Add broth; bring to boil; reduce heat; cover and simmer for 15 minutes.
- Place fish fillets on top of rice; cover and cook until rice is tender and fish flakes easily, about 10 minutes.
- Serve hot.
