Cajun Fish & Rice Skillet

Ingredients

  • 4 fish fillets (such as tilapia)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 2 tsp Cajun seasoning
  • 1 Tbsp olive oil
  • Salt and pepper

Instructions

  1. Season fish with 1 tsp Cajun seasoning and salt; set aside.
  2. Heat olive oil in skillet; sauté pepper, celery, and onion until soft.
  3. Stir in rice and remaining Cajun seasoning; cook 1 minute.
  4. Add broth; bring to boil; reduce heat; cover and simmer for 15 minutes.
  5. Place fish fillets on top of rice; cover and cook until rice is tender and fish flakes easily, about 10 minutes.
  6. Serve hot.
