Ingredients

  • 1 lb lean ground beef
  • 1 Tbsp olive oil
  • 1/2 onion, diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper
  • 4 cups chopped romaine or iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup diced pickles
  • 1/2 cup shredded cheddar cheese
  • Special sauce: 1/4 cup light mayonnaise
  • 2 Tbsp ketchup
  • 1 Tbsp mustard
  • 1 tsp pickle juice

Instructions

  1. Heat oil in skillet; cook ground beef with onion, garlic powder, paprika, salt, and pepper until browned.
  2. In small bowl, whisk mayonnaise, ketchup, mustard, and pickle juice to make special sauce.
  3. Assemble bowls: lettuce, cooked beef, tomatoes, pickles, cheese.
  4. Drizzle with special sauce and serve.
