Cheeseburger Stuffed Sweet Potatoes

Ingredients

  • 2 large sweet potatoes
  • 1/2 lb lean ground beef
  • 1/4 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1 Tbsp ketchup
  • 1 tsp mustard
  • Salt and pepper
  • Pickles for topping

Instructions

  1. Preheat oven to 400°F (204°C). Pierce sweet potatoes and bake for 45–50 minutes until tender.
  2. Meanwhile, cook ground beef and onion in skillet until browned; drain. Stir in tomatoes, ketchup, mustard, salt, and pepper.
  3. Slice baked potatoes lengthwise; fluff insides; top with beef mixture and cheese.
  4. Return to oven for 5 minutes until cheese melts.
  5. Top with pickle slices if desired.
