Classic Vanilla Cheesecake

Ingredients

  • 3/4 cup graham cracker crumbs|2 tablespoons granulated sugar|3 tablespoons butter, melted|12 oz cream cheese, softened|1/3 cup granulated sugar|1/4 cup sour cream|1 large egg|1 teaspoon vanilla extract|1 teaspoon lemon juice|Pinch of salt

Instructions

  1. Lightly grease a 6-inch springform pan and line the bottom with parchment paper.|stir together the graham cracker crumbs, 2 tablespoons sugar, and melted butter.|Press the crumb mixture firmly into the bottom of the pan.|Air fry the crust at 300°F for 4 mins., then set aside.|beat the cream cheese and 1/3 cup sugar until smooth.|Add the sour cream, egg, vanilla, lemon juice, and salt. Mix just until creamy and combined.|Pour the filling over the crust and smooth the top.|Place the pan in the air fryer basket.|Air fry at 285°F for 22 to 28 mins., or until the edges are set and the center has a slight jiggle.|Turn off the air fryer and let the cheesecake sit in the basket for 10 mins.|Cool to room temperature, then refrigerate for at least 4 hours before slicing.

For the smoothest cheesecake, use softened cream cheese and avoid overmixing after the egg is added. Overmixing can add too much air and cause cracks.
