Coconut Macaroon Bites
These are chewy, toasty, and easy to make with just a few ingredients. Air fryer parchment is helpful here because the bites are delicate when hot.

- 2 cups sweetened shredded coconut
- 2 egg whites
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- Cooking spray
- Optional: 1/3 cup melted chocolate, for dipping or drizzling
Instructions
- stir together the coconut, egg whites, sugar, vanilla, and salt until the coconut is evenly coated.
- Let the mixture sit for 5 mins. so the coconut can absorb some of the moisture.
- Scoop the mixture into 16 small mounds, pressing each one gently so it holds together.
- Preheat the air fryer to 320°F. Line the basket with air fryer parchment and lightly spray it with cooking spray.
- Place the macaroons in the basket with a little space between them. Work in batches if needed.
- Air fry for 6 to 7 mins., until the edges are golden and the tops are lightly toasted.
- Let the bites cool in the basket for 5 mins. before moving them. They firm up as they cool, because apparently coconut enjoys suspense.
- Drizzle with melted chocolate or dip the bottoms if desired.
