Creamy Garlic Chicken with Mashed Sweet Potatoes

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 sweet potatoes, peeled and cubed
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-fat milk
  • 1 Tbsp light cream cheese
  • 1/2 tsp dried thyme
  • Salt and pepper
  • 1 Tbsp butter

Instructions

  1. Place sweet potatoes in a saucepan and cover with water. Bring to a boil and cook until tender, about 15 minutes.
  2. Drain and mash sweet potatoes with butter, salt, and pepper. Keep warm.
  3. Season chicken breasts with salt, pepper, and thyme. Heat olive oil in a skillet over medium-high heat and cook chicken until browned and cooked through, about 6–7 minutes per side. Transfer to a plate.
  4. In the same skillet, reduce heat to medium. Add minced garlic and cook for 1 minute. Stir in chicken broth and milk, scraping up browned bits.
  5. Whisk in light cream cheese until smooth. Simmer until sauce thickens slightly.
  6. Return chicken to the skillet and coat with garlic sauce. Simmer for 2 minutes.
  7. Serve chicken over mashed sweet potatoes, spooning extra sauce on top.
