Creamy Garlic Chicken with Mashed Sweet Potatoes

- 2 boneless skinless chicken breasts
- 2 sweet potatoes, peeled and cubed
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1/2 cup low-fat milk
- 1 Tbsp light cream cheese
- 1/2 tsp dried thyme
- Salt and pepper
- 1 Tbsp butter
Instructions
- Place sweet potatoes in a saucepan and cover with water. Bring to a boil and cook until tender, about 15 minutes.
- Drain and mash sweet potatoes with butter, salt, and pepper. Keep warm.
- Season chicken breasts with salt, pepper, and thyme. Heat olive oil in a skillet over medium-high heat and cook chicken until browned and cooked through, about 6–7 minutes per side. Transfer to a plate.
- In the same skillet, reduce heat to medium. Add minced garlic and cook for 1 minute. Stir in chicken broth and milk, scraping up browned bits.
- Whisk in light cream cheese until smooth. Simmer until sauce thickens slightly.
- Return chicken to the skillet and coat with garlic sauce. Simmer for 2 minutes.
- Serve chicken over mashed sweet potatoes, spooning extra sauce on top.
