Molten Chocolate Lava Cakes

Ingredients

  • 4 oz semi-sweet chocolate, chopped|4 tablespoons unsalted butter|1/3 cup powdered sugar|1 large egg|1 large egg yolk|1/2 teaspoon vanilla extract|2 tablespoons all-purpose flour|Pinch of salt|Cooking spray or butter for ramekins|Optional powdered sugar for serving

Instructions

  1. Grease two 6-ounce ramekins well with cooking spray or butter.|Place the chopped chocolate and butter in a microwave-safe bowl. Microwave in 20-second bursts, stirring between each, until smooth.|Whisk in the powdered sugar until combined.|Add the egg, egg yolk, and vanilla. Whisk until smooth.|Stir in the flour and salt just until no dry streaks remain.|Divide the batter between the prepared ramekins.|Place the ramekins in the air fryer basket.|Air fry at 370°F for 7 to 9 mins., or until the edges are set and the centers still look slightly soft.|Let the cakes rest for 1 minute.|Carefully run a knife around the edges and invert onto plates, or serve directly in the ramekins.|Dust with powdered sugar if desired and serve warm.

Air fryer models vary, so check at 7 mins. the first time. The cakes are done when the edges are puffed and set but the middle still has a gentle wobble.
