Smothered Pork Chops with Green Beans

Ingredients

  • 4 pork chops (boneless center-cut)
  • 1 Tbsp olive oil
  • 1 onion, sliced
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 Tbsp cornstarch
  • 1 lb green beans, trimmed
  • Salt and pepper
  • 1 tsp paprika

Instructions

  1. Season pork chops with salt, pepper, and paprika.
  2. Heat olive oil in skillet; sear pork chops on both sides until browned; remove and set aside.
  3. In same skillet, sauté onion and mushrooms until tender; add garlic and cook 1 minute.
  4. Return pork chops to skillet; add broth and bring to simmer. Cover and cook for 10 minutes.
  5. Whisk cornstarch with a little water; stir into skillet; simmer until gravy thickens.
  6. Meanwhile, steam or sauté green beans until crisp-tender; serve alongside pork chops with gravy.
